Receta de FETTUCCINE ALFREDO
La salsa Alfredo es una salsa para aderezar pastas. Originalmente contenía simplemente queso parmesano y mantequilla, aunque modernamente, además de dichos ingredientes, suele agregársele roux o crema de leche.
INGREDIENTES
500 gramos de fettuccine
60 gramos de mantequilla
100 gramos de queso parmesano
300 centímetros cúbicos de nata o Crema de leche
1 pizca de sal
1 pizca de pimienta blanca
1 pizca de nuez moscada
PREPARACIÓN
Usa una olla con abundante agua, coloca un poco de sal y lleva al fuego. Cuando empiece a hervir añadirás la pasta fresca y la dejarás aproximadamente unos 3-4 minutos. Después de este tiempo debes sacar la pasta, que debe estar al dente, para que después la terminemos de cocer con la salsa.
Cuando la pasta ya haya hervido, debes retirarla del fuego y escurrirla bien. Colócala sobre un plato para que quede separada y no amontonada, ya que si no se quedaría pegada.
Reservamos el plato de pasta y el agua de la misma para seguir cocinando con ella más tarde, no hay que tirarla.
Para la salsa. Colocas la mantequilla en trozos y cuando haya estado un rato a temperatura ambiente en una cazuela, pones parte del queso parmesano rallado. Con un cucharón debes añadir progresivamente el agua del caldo de cocer la pasta, iremos removiendo con unas varillas, debes ir añadiendo más queso y más caldo progresivamente hasta que se forme una salsa cremosa.
Para finalizar ñadimos un poco de pimienta o nuez moscada.
Luego, ñadir la pasta a la cazuela, remover para que absorba bien la salsa para que adquiera
todo el sabor. Servimos los fettuccines alfredo bien calientes con un poco de pimienta y queso parmesano.
