Receta de KHANOM THUNGTAG
Es un tipo de crepes a base de harina de arroz que tienen gran semejanza con los tacos mexicanos por su forma de servirlos.
INGREDIENTES:
100 gramos de harina de arroz
50 gramos de harina de frijol
220 gramos de azúcar
125 miligramos de agua
1 huevo
3 claras de huevo
1 cáscara de huevo
10 gramos de coco en polvo
3 claras de huevo
80 gramos de huevo hilado
PRAPARACIÓN
Triturar la cascara del huevo (bien limpia) con ayuda de un mortero hasta que se pulverice.
Colocar en un bol la cascara de huevo triturada y verter los 125 mililitros de agua. Reservar.
Mezclar bien las claras de huevo y 70 gramos de azúcar en otro bol hasta que quede una solución homogénea.
Extraer con un cucharon solamente el agua que remoja la cascara del huevo a otro recipiente.
Mezclar el agua con la harina de arroz, el huevo y los 150 gramos de azúcar restante. Incorporar el coco en polvo y batir bien.
Calentar una sartén antiadherente y colocar porciones de mezcla delgadas, como se hacen con las crepes.
Colocar sobre la masa preparada porciones de la crema de huevo con azúcar.
Añadir encima de la masa y la crema un poco del huevo hilado y yemas de huevo
Es posible dorar las yemas de huevo en una sartén aparte, dejar que endurezcan y luego cortar en tiras. Al cocinar estas creps asiáticas solo se esperan un par de minutos para que se cocinen y se doblan.
