Risotto de calabaza
INGREDIENTES
1/2 taza de vino blanco seco
2 tazas de arroz arborio
1 taza de petit pois cocidos
2 onzas de queso parmesano rallado
Una pizca de pimienta negra
6 tazas de caldo de vegetales
o pollo
6 cucharadas de mantequilla
1 cebolla pequeña picada
1 libra de calabaza pelada y
cortada en cubos
PROCEDIMIENTO:
Pon el caldo en una olla para calentar. Mantén caliente pero que no hierva.
En otra olla derrite 4 cucharadas de la mantequilla a fuego medio y sofríe la cebolla hasta que esté traslúcida.
Agrega la calabaza y mezcla bien. Echa el vino y cocina hasta que se haya evaporado casi todo.
Agrega el arroz, mezcla bien y cocina hasta que los granos se hayan vuelto un poco traslúcidos.
Con un cucharón agrega un poco de caldo al arroz.
Cuando el arroz haya absorbido el caldo, agrega otra cucharada de caldo (suficiente para cubrir el arroz), mueve bien todo el arroz y deja reposar.
Continúa agregando caldo de a poco. Después de cada adición mueve todo el arroz y deja reposar hasta que haya absorbido el caldo.
Cuando esté a punto de acabarse el caldo prueba el arroz. El mismo estará en su punto cuando esté firme pero no duro. En caso de que se haya terminado el caldo pero el arroz no esté se puede seguir añadiendo agua caliente con un poco de sal.
Cuando el arroz haya llegado a su punto retira del fuego y agrega las restantes 2 cucharadas de mantequilla, el queso rallado, los petit pois y la pimienta. Mezcla todo bien y sirve de inmediato.
